With organic apples at peak season in the Adelaide Hills, it’s time to pull out the good old faithful apple crumble, warm, saucy and delicious, top with coconut yoghurt or ice cream, the perfect dessert or breakfast. We like to use golden delicious but you really can use any apple or pear.
Ingredients
Filling
8 large golden delicious apples cut and cored
1 lemon, juiced
1/3 cup of coconut sugar
1 1/2 tsp cinnamon
1/3 tsp ginger powder or 3/4 tsp fresh ginger
3 Tbsp tapioca flour
1/4 cup water
Topping
1 cup rolled oats (Gluten tested for coeliac)
1/2 cup almond meal
1/2 cup of fine coconut
1/2 cup of coconut sugar
1/2 cup of nuts of your choice roughly chopped
1/4 tsp Celtic sea salt
1/2 cup of olive oil or melted coconut oil
Method
1. Preheat oven to 180c
2. Peel apples, remove the cores and thinly slice. Add to a mixing bowl with all of the filling ingredients and toss to combine.
3. Mix all topping ingredients together in another bowl until mixed well.
4. Add filling mixture to a large casserole dish, spread the topping over evenly.
5. Bake for 1 hour or until the filling is bubbly and the apples are tender.
6. Rest on the counter for 20-30 mins and serve with ice cream or coconut yoghurt.
